Board Member Spotlight: Cindy Casey

The Edible Prairie Project is governed by an all-volunteer Board of Directors, made up of seven dedicated members. Each board member brings unique skills, experience, and passion that help guide our mission of bridging the food insecurity gap in Campbell County. We deeply appreciate their time, expertise, and commitment.


In this issue, we’re highlighting Cindy Casey, who currently serves as our Board Secretary.


What inspired you to join our Board?


I was drawn to the Edible Prairie Project because of its commitment to locally grown, sustainable food and its mission to making these foods accessible to the community - especially for those who may not have the economic resources to purchase fresh ingredients from the stores.


I decided to join the Board because I want to be part of something so basic and essential to community well-being. I am excited to help support and grow an initiative that nourishes people while strengthening local connections.


What does access to fresh, local food mean to you?


Food is my “love language” and when you have access to fresh, locally sourced ingredients, a few things naturally happen:


  • The fresh flavors are the start, so they do most of the work when making a delicious meal.

  • Your cooking becomes seasonally creative. You get to explore recipes around what’s freshest that week or put a new twist on an old favorite based on what is available.

  • It naturally supports healthier meals.


What's something people might be surprised to learn about you?


People might be surprised to learn that I love adventure. Last year, my husband and I engaged in a dog fight over the Las Vegas desert while flying high-performance aerobatic planes. I lost the dogfight but managed to pull a 7-8 G turn without passing out! A few months ago, I hiked up the side of a waterfall in Belize and then rappelled down its face. Skydiving is still on my bucket list.
