Board Member Spotlight: Laurel Vicklund

The Edible Prairie Project is governed by an all-volunteer Board of Directors made up of seven dedicated members. Each board member brings unique skills, experience, and passion that help guide our mission of bridging the food insecurity gap in Campbell County. We deeply appreciate their time, expertise, and commitment.


In this issue, we’re highlighting Laurel Vicklund, who has served on our Board since 2022.


What inspired you to join our Board?


I was impressed by the organization and the work the EPP team puts into growing food locally. What really drew me in was when EPP began expanding its programs to reach households eligible for SNAP and WIC, broadening both the impact and the reach of this work.


What does access to fresh, local food mean to you?


Vegetables are not easily grown in Campbell County. I appreciate that EPP makes the effort to not only grow produce locally but also does so at a scale that the harvest can be shared with our community. I like that EPP grows and distributes new and different types of vegetables that not only grow well here but also are very tasty!


What's something people might be surprised to learn about you?


I have a bachelor's degree in soils.
